Last week, the Illustrator and I made dinner for his parents using a recipe we got from eMeals. eMeals is a paid service that sends you a week’s worth of recipes using the same ingredients so you don’t waste food. (I have about 50 regular readers, so no, this blog post isn’t sponsored.) Since I’ll be living alone at Oxford next year, my friend signed me up for a subscription as a gift, and yesterday was the first time we tried it out. We decided to photograph the experience and share the recipe (and our thoughts) with you.
Ingredients (for four people):
1 (14-oz) package extra-firm tofu
1 lb head broccoli
2 tablespoons olive oil
4 tablespoons thinly sliced red onion
2 (15-oz) cans of chickpeas, drained and rinsed
1/2 cup freshly grated Parmesan cheese
3 teaspoons olive oil
2 cup uncooked couscous
2 cloves garlic, minced
1 teaspoon salt
2 tablespoon chopped fresh flat-leaf parsley
Steps:
Main dish:
1. Remove the tofu from ts packaging and drain it using paper towels. Dice it into small cubes.
2. Cut the broccoli to size and place it in a covered, microwave-safe bowl. Microwave it on high for four minutes, or until it looks crisp, then drain.
3. Heat the olive oil in a non-stick pan over medium heat, then add the tofu and onion. Cook for ten minutes and stir often.
4. Add the chickpeas and cook for five minutes. Stir in the broccoli and half the cheese. Serve over the couscous, and sprinkle the remaining cheese on top.
Couscous:
1. Heat the butter and oil over medium heat.
2. Add the couscous, salt, and garlic; sauté until lightly browned. Remove from heat source.
3. Pour two cups of boiling water over the couscous; cover the pan and let the recipe stand for five minutes.
4. Stir in the parsley and serve under the vegetables and tofu.
Thoughts:
The couscous was buttery and lovely. The Illustrator and I both liked the sauteed vegetables, but felt it was a little bland and could have benefited from some extra spice or sauce. The Illustrator’s dad suggested curry powder. If you decide to try this recipe and add a little something, let me know in the comments!
